Nutrichemical alterations in different fractions of multiple-harvest alfalfa (Medicago sativa L.) green biomass fortified with various selenium forms

Abstract Background and Aims Wet processed alfalfa-based products can provide high-quality concentrated protein, also contain nutrients phytochemicals. Agronomic fortification increase selenium (Se) incorporation into green biomass. For this reason, the aim was to investigate how different forms of Se are incorporated biomass multiple-harvest alfalfa they affect chemical quality product candidates. Methods In research, enriched with three at concentrations [selenate (Se(VI)); selenite (Se(IV)); red elemental (Se0)]. The fortified fractionated leaf protein concentrate (LPC), fiber phytoserum, changes in content speciation, phytochemical composition were determined. Results Total fractions drastically reduced within four consecutive harvests, particularly for Se(VI) Se(IV) forms, significantly varied according treatments. Selenomethionine (SeMet) predominant organic species LPC (35.7–246.0 µg g − 1 DW) (9.0- 47.7 fractions. Se-fortification induced considerable crude LPC, which between 29—45 (m/m)%. Phytochemical markedly among Se-treatments. Besides several flavonoids, aglycones glycosyl derivatives, apigenin glucuronide, most abundant a concentration up 170.85 DW. Medicagenic acid below 1.86 DW LPC. Conclusions Se-enhanced could functional products, such as human animal consumption enhanced nutritional value, including Se, contents.
